I’ll be the first to admit I hopped off of the Whole30 bandwagon (I blame summer cocktails and soirées) and now I need it in my life. Spyros and I are committed to living the Whole30 life during the week (and weekend meals when we can help it) before our beach trip in July – and I’m sure we’ll be doing it again after our beach trip -ha!
If you read our Whole30 reflections, you’ll note that doing a million dishes got super old. Well, luckily, I am a huge fan of my crock-pot and this balsamic chicken recipe I whipped up is seriously so good and so easy.
Crock-pot Whole30 Balsamic Chicken:
- 2 pounds of chicken breast (season with salt and pepper)
- 1 can of organic diced tomatoes, drained
- 1 cup of organic, low sodium chicken broth
- 1/2 cup of balsamic vinegar
- 2 tablespoon of Italian seasoning
- 1 teaspoon each of garlic powder, onion powder, and dried basil
Throw all ingredients into the crock-pot, stir around to coat the chicken, and then set on low for 6 hours. Shred chicken and serve with desired sides or over zucchini noodles!
This meal earned a, “put it on the menu!” from my husband which is always music to this wanna-have-my-own-cooking-show wife’s ears! I served our chicken with a side of our favorite roasted rosemary sweet potatoes (seriously we can never get enough of them) and some roasted cauliflower. It was filling and healthy and delicious.
