Who doesn’t love a good casserole? I am 100% sure one of my husband’s love languages is: casseroles. He absolutely loves them. And, whenever I make a casserole I actually think of marriage. That sounds weird, I know, but at Elise and Mark’s rehearsal dinner, Mark’s dad said in his toast, “marriage is like a casserole…only those responsible for it truly know what goes into it.” And you know what, that is SO true. So, here’s a casserole that will keep your marriage strong because your husband is going to LOVE IT.
Chicken and Wild Rice Casserole (adapted from this recipe):
- 1 package of wild rice
- 1/2 cup of chopped onion
- 1/2 cup of chopped celery
- 1 cup of chopped mushrooms
- 2 tablespoons of ghee (or butter)
- 1 can of cream of chicken soup
- 1/2 cup of sour cream (can also use plain greek yogurt)
- 1/3 cup of chicken broth
- 2 generous tablespoons of dried basil
- 2 cups of shredded chicken (I used a store bought rotisserie chicken)
- 1/2 cup of shredded parmesan cheese
While the rice is cooking, chop your onion, celery, and mushrooms. Add two tablespoons of ghee to a pan and cook your veggies until brown and tender. Add in soup, shredded chicken, chicken broth, sour cream, and basil and stir until combined. Add in your wild rice once cooked and stir to combine. In a pyrex dish (I used an 8×8) spray coconut oil and pour in casserole. Top with parmesan cheese and bake for 30 minutes at 350 degrees. Switch your oven to broil for the last 5 minutes to brown your cheese! Enjoy.
You can also freeze this (don’t bake it first) in the oven to cook and eat at a later date. I made two casseroles with the store bought rotisserie chicken and we ate one for dinner and then I froze the other to have on hand for mamas with new babies or for us to enjoy at a later date! Just be sure you don’t bake the casserole you plan to freeze. Since the chicken is already cooked through, you can freeze it without baking beforehand :)!
