Y’all asked for more recipe posts, so here we go! And, to be completely honest, I might be the only sister that you get recipe posts from. Elise will happily entertain me while I cook, heck, she even cleans dishes (!!), but to actually cook/bake/chop – well, it just isn’t her thing. And that’s why two is always better than one, am I right?!? With that being said, this recipe is Elise-friendly! It is 100% fool-proof, easy, and so good. Our mom made this pasta salad growing up, and we’ve just tweaked it through the years!
Fool-Proof Pasta Salad Recipe:
- 2 boxes of rotini or fusilli pasta (using tricolor makes it look pretty and feel free to use GF pasta if needed)
- 1 can of organic diced tomatoes, drained
- 1 can of organic chickpeas/garbanzo beans, drained
- 1 whole cucumber, diced
- 1 cup of shredded parmesan cheese
- 1 container (16 fl oz) of zesty italian dressing
Cook the pasta according to instructions. Be sure you put olive oil and salt into the pasta water, it’s your only chance to flavor the pasta. While cooking, dice your cucumber, ridding any seeds. Drain pasta and run cold water over it to cool. Place pasta in a bowl and add drained chickpeas, drained tomatoes, diced cumber, and parmesan cheese tossing together with each add on. Pour the zesty italian dressing over the pasta salad and continue to mix it together. I use almost an entire 16oz container, but you can do taste-tests to get it to your liking. Refrigerate for at least 2 hours before serving, but longer if able!
It’s light, refreshing, and so so easy. I highly recommend bringing it to your next cookout with friends…it’s something I usually always offer up to bring right off the bat and it’s always a hit! The leftovers are also super delicious because the more it marinades in the dressing, the better it gets. Win, win.
